Vegetable oil cooking spray for misting the waffle iron
1 3/4 cups biscuit mix such as Bisquick
2 tablespoons unsweetened cocoa
1 1/4 cups milk
1 large egg
2 tablespoons vegetable oil
Pinch of ground cinnamon
1/4 cup miniature chocolate chips
Preheat an electric waffle iron. Mist the top and bottom of the interior with vegetable oil cooking spray. Preheat the oven to 250 F (you will use it to keep the waffles warm until they are all ready to serve).
Place the biscuit mix, cocoa, milk, egg, oil and cinnamon in a large mixing bowl and stir to combine well. Fold in the chocolate chips and mix until they are just incorporated. Ladle about 1/3 of the batter onto the hot waffle iron, spreading it out so that it almost but not entirely covers the bottom. Close the lid and cook the waffle for 3-4 minutes or until the light comes on to indicate that the waffle is done. The waffle is fully cooked when it does not stick to the top or bottom of the iron. Using a fork, transfer the waffle to a heatproof plate and place it in the oven to keep warm. Repeat with the remaining waffle batter.
Makes 6 waffles (6 inches each)
Note: I added 2 tablespoons sugar to the batter before cooking and more cinnamon.

Simple Pumpkin Waffles

Dry ingredients:
2 cups all-purpose flour
1/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon allspice
1/2 teaspoon nutmeg
Wet ingredients:
3 eggs
1 1/3 cups milk
1/4 cup maple syrup
3 tablespoons butter, melted
1 cup pumpkin puree
In a large bowl, stir together the dry ingredients. In a measuring cup mix the wet ingredients. Then, stir in the pumpkin.
Add the wet ingredients to the dry ingredients and stir until combined.
Bake the waffles in your waffle iron according to the manufacturer's instructions.
Serves 12-16
Note: I like to add chopped pecans to the batter.

Banana Ginger Waffles

1 teaspoon ground cinnamon
3/4 teaspoon ground ginger
2 eggs, beaten
1/3 cup brown sugar
3/4 cup milk
1 ripe banana, mashed
1/4 cup molasses
1/4 cup butter or margarine, melted
2 large bananas, sliced (optional)
Combine flour, baking powder, salt, cinnamon and ginger in a medium mixing bowl; mix well.
Combine eggs, sugar, milk, banana and molasses; beat well until smooth. Add to dry ingredients, stirring just until moistened; stir in butter.
Bake in a preheated lightly oiled waffle iron about 5 minutes,
Serve with sliced bananas, if desired.
Yield: 12 (4-inch) waffles

Pumpkin Waffles

1 cup canned pumpkin
1 cup milk
4 tablespoons butter, melted
2-3 teaspoons ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg

2 1/2 teaspoons pumpkin pie spice instead of the spices above.
Spread waffle iron with nonstick cooking spray and heat to desired temperature.
Combine cornstarch and sugar in a large bowl. Whisk together to break apart the cornstarch. Add the remaining dry ingredients and whisk to blend.
Separate the eggs. Add the pumpkin and milk to the egg yolks; whisk to blend well. Add the melted butter; whisk to blend and set aside. Whisk the egg whites with a hand mixer on high until stiff peaks form, 1-1 1/2 minutes. Set aside.
Add the pumpkin mixture to the dry ingredients and mix them together until just combined. Gently fold in the egg whites until blended.
Pour the batter on the heated waffle iron and cook to perfection (I added 1/3 cup miniature chocolate chips to the batter before cooking).
* To lower the cholesterol, I used 1 egg yolk and 3 eggs whites.
Note: You can freeze leftover waffles and then pop them in the toaster later.

Morning Glory Waffles
2 cups Bisquick Original Baking Mix
1 egg, beaten
1 1/3 cups low-fat milk, at room temperature
2 tablespoons Canola oil
2 tablespoons firmly packed brown sugar
1 1/8 teaspoons ground cinnamon
1/3 cup chopped pecans
1/3 cup shredded carrots
1/2 cup peeled shredded Granny Smith apples
3 tablespoons flaked coconut
1 teaspoon vanilla extract
Mix wet ingredients, apple, carrot and coconut in a medium-size bowl.
Mix dry ingredients. Combine the dry and the wet ingredients. Stir in the pecans.
Cook in a hot waffle maker sprayed with non-stick cooking spray. Cook according to the waffle maker instructions.
Serve hot with maple syrup, flaked coconut, chopped pecans and sliced apples.
Makes 9 waffles

Vegan Multigrain Waffles-Melba-Style
1 cup all-purpose flour
1/3 quick-cooking oatmeal
1/4 cup wheat germ
1/4 cup flax seed meal
1 tablespoon cornmeal
1 tablespoon baking powder
1 teaspoon salt
4 tablespoons honey
1/4 cup Canola oil
2 teaspoons vanilla extract
2 1/2 cups plus 2 tablespoons fat-free milk
2 very ripe bananas, mashed (1 cup)
1/4 cup chopped pecans
Mix the dry ingredients in a big bowl. Then mix the wet ingredients in another bowl and add to the dry ingredients. Cook the waffles following the waffle maker instructions making sure the batter cooks through.
Serve with peach slices in 100 % fruit juice, strawberry syrup and fat-free whipped cream or your favorite syrup.
Makes 14-16 waffles

Home-made Apple Pie Spice Recipe

1 1/2 teaspoons groung nutmeg

Apple Pie Waffles
6 tablespoons butter, melted
2 cups Bisquick Mix
2-2 1/2 teaspoons apple pie spice
2 tablespoons sugar
2 eggs
1 1/4 cups milk
1 cup finely chopped Golden Delicious apples, peeled and cored
Mix the dry ingredients in a a bowl. Combine the wet ingredients in another bowl. Mix it altogether. Use 1/4 measuring cup per waffle. Cook as directed on waffle maker.
Serve with syrup and whipped cream sprinkled with cinnamon (optional)
Makes 12 waffles

Banana Nut Waffles
We love this Betty Crocker Bisquick recipe.
2 cups Bisquick Original baking mix
1 cup mashed very ripe bananas (2 medium)
1 cup milk
1/4 cup finely chopped walnuts or pecans
2 tablespoons vegetable oil
1 egg
Sliced bananas if desired
Chopped walnuts or pecans
Maple syrup
Heat waffle iron; grease if necessary. Stir all ingredients until blended.
Pour batter onto center of hot waffle iron.
Bake until steaming slows and waffle is golden brown. Carefully remove waffle.
Serve with bananas, walnuts and maple syrup.
Yield: 12 (4-inch squares).

Gingerbread Waffles

Mix:
2 cups flour

Chocolate Waffles with Caramel Banana Topping
Betty Crocker Bisquick Cookbook (recipe slightly modified).
These waffles are really good for dessert.
Waffles:
1 1/2 cups Original Bisquick
1 cup sugar
1/3 cup baking cocoa
3/4 cup water
2 tablespoons vegetable oil
2 eggs
1/4 cup semi-sweet miniature chocolate chips
Mix the eggs, water and oil. Stir remaining ingredients until blended.
Make the waffles.
Caramel Banana Topping:
1/4 cup packed brown sugar
1/4 cup heavy whipping cream
1/4 cup light corn syrup
2 tablespoons butter
1 teaspoon vanilla
3 medium bananas, sliced
Mix the all the ingredients except bananas in a small saucepan. Heat to boiling, stirring occasionally; remove from heat. Add bananas; stir gently until well coated and serve over waffles.
Optional garnishes:
Whipped cream
Fresh strawberries sliced
Miniature semi-sweet chocolate chips
Mint sprigs

Oatmeal and Whole Wheat Waffles (Light)
This waffle batter is great; it can be used to make pancakes as well.

1 egg beaten
1/2 cup quick-cooking oats
1/2 cup whole wheat flour plus 3 tablespoons
1 cup buttermilk or 1 cup milk minus 1 tablespoon and add 1 tablespoon vinegar
2 teaspoons molasses
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 tablespoon vegetable oil
Mix eggs and buttermilk. Add oats and mix well. Stir in molasses and oil. Combine dry ingredients. Stir into the egg mixture. It batter becomes too thick, thin with a little extra milk.
Pour about 3/4 cup batter onto a greased preheated waffle maker. Bake according to manufacturer's directions.
Really good if served with fresh fruit and berry syrup.
Makes 6 individual waffles.

Orange Waffles with Mandarin Orange Sauce
Waffles:
2 cups Bisquick 1 tablespoon sugar 1 egg beaten 1 1/4 cups milk 2 tablespoons melted butter 3/4-1 tablespoon grated orange zest. Prepare waffles according to the waffle maker instructions. Serve hot with the sauce on top.
Orange Sauce:
1 cup orange juice 1/2 tablespoon cornstarch 1/4 cup packed dark brown sugar 1 can (15 oz) mandarin oranges, drained Mix the orange juice, sugar and cornstarch. Cook on medium heat stirring constantly until the sauce thickens. Remove from the stove and add the mandarin oranges. Stir gently.
