Peanut butter cookies

Cream:

1/2 cup butter
1/2 cup sugar
1/2 cup firmly packed brown sugar

Add:

1 egg
1/2 cup chunky peanut butter
2 teaspoons vanilla

Beat until light and fluffy.

Mix:

1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda.

Add the dry ingredients to the creamy mixture mixing well.

Form balls and place them in an ungresed cookie sheet. Dip a fork in 4 tablespoons of sugar and flatten cookies making a crisscross pattern.

Bake in a preheated 375F oven for 6-9 minutes. Let it rest for a minute and removie to cookie racks.

High Altittude (over 3500 feet): Increase flour to 1 1/2 cups

Variation:

Add some semi-sweet mini chocolate chips to the cookie dough and before forming the balls.
