Mix:
3 eggs
1 cup Canola oil
2 teaspoons vanilla
1 1/4 cups sugar
Add:
2 cups grated carrots
1/4 cup flaked coconut
1 Granny Smith apple, peeled and grated
1 cup raisins
1/2 cup chopped pecans
Mix dry ingredients:
2 cups plus 2 tablespoons all-purpose flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
Mix everything together. Pour mixture in greased and floured mini-muffin cups, 3/4 full.
Bake at 350 F for 10-12 minutes. Let cool down for a few minutes. Remove from muffin cups.
Makes 48 mini-muffins
Note: For regular-size muffin cups, bake at 350 F for 15-20 minutes.
Makes 24 muffins
