Crust:
1 ½ cups
unsifted all-purpose flour
½ cup confectioners’ sugar
¾ cup cold butter
Filling:
4 eggs, slightly beaten
1 1/2 cups granulated
sugar (I only add 1 1/4 cups)
1 teaspoon baking powder
1/2 cup lemon juice from concentrate

tablespoons all-purpose flour
Additional confectioners’ sugar.
Instructions:
Preheat oven to 350F. In medium
bowl, combine 1 ½ cups flour and ½ cup confectioners’ sugar.
Cut in ¾ cup butter
until mixture is crumbly. Press onto bottom of lightly greased and floured
13x9-inch baking pan. Bake for 15 minutes.
Meanwhile in a large bowl, combine
remaining ingredients except confectioners’ sugar; mix well. Pour over baked
crust; bake for 20-25 minutes or until golden brown. Cool and cut into bars.
Sprinkle with additional confectioners’ sugar.
Store covered in refrigerator;
serve at room temperature.
