1/2 cup butter, softened
1/2 cup firmly packed brown sugar
1/3 cup granulated sugar
1 egg
1 teaspoon vanilla
3/4 cup all-purpose flour
3/4 cup wheat germ (or use wheat bran)
1 teaspoon baking powder
1 cup raisins
1/2 cup chopped pecans
1/3 cup sweetened shredded coconut
1/3 cup old-fashioned oats
Preheat oven to 350 degrees.
In a large bowl, cream butter and sugars until fluffy. Add egg and vanilla; beat until smooth. In a small bowl, combine flour, wheat germ and baking powder. Add dry ingredients to creamed mixture; stir until a soft dough forms. Stir in pecans, raisins, coconut and oats.
Drop heaping tablespoons of dough 2 inches apart onto a greased baking sheet.
Bake 11-13 minutes ( I baked for 9 minutes only) or until edges are lightly browned.
Cool cookies on pan 5 minutes; transfer to a wire rack to cool completely. Store in an airtight container.
