Apple Fritters

1 egg, beaten
1/2 cup milk
2 teaspoons sugar
1 teaspoon ground cinnamon (I add a little more)
1 cup self-rising flour
1 (8-ounce) carton commercial sour cream
1/4 cup vegetable oil, divided
3 cooking  apples, peeled, cored and thinly sliced
Powdered sugar

Combine first 5 ingredients, and mix well. Stir in the sour cream.

Heat 2 tablespoons vegetable oil in a large skillet. Dip apple slices in batter. Cook several slices at a time 3 to 4 minutes on each side or until golden brown. Drain fritters on paper towels.

Add remaining vegetable oil to skillet as needed.

Dust fritters with powdered sugar, and serve hot.

Yield: 4-6 servings.
