Chocolate Waffles with Caramel Banana Topping


Betty Crocker Bisquick Cookbook (recipe slightly modified).
These waffles are really good for dessert.


Waffles:

1 1/2 cups Original Bisquick
1 cup sugar
1/3 cup baking cocoa
3/4 cup water
2 tablespoons vegetable oil
2 eggs
1/4 cup semi-sweet miniature chocolate chips

Mix the eggs, water and oil. Stir remaining ingredients until blended.

Make the waffles.

Caramel Banana Topping:

1/4 cup packed brown sugar
1/4 cup heavy whipping cream
1/4 cup light corn syrup
2 tablespoons butter
1 teaspoon vanilla
3 medium bananas, sliced

Mix the all the ingredients except bananas in a small saucepan. Heat to boiling, stirring occasionally; remove from heat. Add bananas; stir gently until well coated and serve over waffles.

Optional garnishes:

Whipped cream
Fresh strawberries sliced
Miniature semi-sweet chocolate chips
Mint sprigs
