Banana Muffins with Oatmeal Streusel
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 cup packed brown sugar
2 teaspoons baking powder
1 tsp cinnamon
3/4 cup low-fat milk
1 cup mashed ripe bananas
1/4 cup Canola oil
1/4 teaspoon salt
1 teaspoon vanilla
1 large egg
1/2 cup walnuts, chopped
Streusel:
6 tablespoons quick-cooking oats
2 1/2 tablespoons all-purpose flour
3 tablespoons brown sugar
1/4-1/2 teaspoon cinnamon
3 tablespoons butter
Mix dry ingredients in a big bowl. Mix wet ingredients and sugar in another bowl stirring until moistened. Combine both mixtures and add walnuts.
Grease and flour 12 muffins cups. Spoon batter into the cups.
Mix the streusel ingredients rubbing the butter with the fingers until mixture resembles coarse meal. Sprinkle streusel over batter.
Bake at 375 for 22-23 minutes or until a skewer inserted in the middle of a muffin, comes out clean.
Yield: 12 muffins
