Spinach and Mandarin Orange Salad

1 (24 oz) bag baby leaf spinach (comes washed and trimmed)
2 (11 oz each) cans mandarin orange segments, drained well
1/2 cup sliced almond, toasted
1 Recipe spinach salad dressing

Place the spinach in a bowl, Top with mandarin orange segments; sprinkle almonds.

Salad Dressing:

(We call it Magic Salad Dressing at home)

2/3 cup white vinegar
1 1/2 cups sugar
3 tablespoons chopped onion
1 teaspoon mustard
2 teaspoons salt
1 1/2 cups vegetable, Canola or 100 % pure Olive oil

Mix all ingredients except oil in blender. Gradually add oil, mixing thoroughly. Pour into small jars and refrigerate. Keeps up to 3 weeks in refrigerator.

Note: This recipe yields a lot of dressing.

Makes 8 servings
