Confetti Pilaf


1 1/2 cups uncooked long grain rice
2 cups water
1/4 cup butter
1 tablespoon instant chicken bouillon
1/2 teaspoon fresh minced garlic
1/2 cup finely chopped carrots
1/2 cup slivered almonds, toasted
1/4 cup chopped fresh parsley
2 tablespoons sliced green onions
Salt
Black pepper

Bring water, garlic, butter, bouillon, salt and black pepper to a full boil. Reduce heat to low; simmer covered until rice is tender (20-25 minutes)

Stir in remaining ingredients and fluff with a fork. Serve immediately.

Makes 4 servings
