Oatmeal and Whole Wheat Waffles (Light)

This waffle batter is great; it can be used to make pancakes as well.




1 egg beaten
1/2 cup quick-cooking oats
1/2 cup whole wheat flour plus 3 tablespoons
1 cup buttermilk or 1 cup milk minus 1 tablespoon and add 1 tablespoon vinegar
2 teaspoons molasses
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 tablespoon vegetable oil

Mix eggs and buttermilk. Add oats and mix well. Stir in molasses and oil. Combine dry ingredients. Stir into the egg mixture. It batter becomes too thick, thin with a little extra milk.

Pour about 3/4 cup batter onto a greased preheated waffle maker. Bake according to manufacturer's directions.

Really good if served with fresh fruit and berry syrup.

Makes 6 individual waffles.
