Curry-Cajun Spiced Chicken

Kitchen Aid Cookbook

(I made a couple of modifications)



6 boneless skinless chicken breasts (about 1 1/2 lb)

Sauce:

2 teaspoons curry powder
2 teaspoons Cajun Seasoning
1/3 cup honey
3 tablespoons Dijon mustard
6 tablespoons water
2 tablespoons butter, melted
1 teaspoon lime or lemon juice
1 clove garlic, minced

Hot cooked rice

Rinse chicken. Pat dry with paper towels. In a 13x9x2-inch baking pan, combine all the sauce ingredients. Add the chicken stirring to coat with the sauce.

Bake at 350 F for 35-40 minutes or depending on the thickness of the chicken. Serve with pan juices and rice.
