Apple Oatmeal-Raisin Cookies

365 Great Cookies and Brownies


2 cups firmly packed dark brown sugar
2 sticks (8 oz) butter, softened
2 eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
2 cups rolled oats
1 teaspoon baking powder
1 teaspoon grated nutmeg
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups finely diced, peeled tart cooking apples
1 cup raisins
1 cup chopped walnuts

Preheat oven to 375 F. In a large bowl, beat brown sugar and butter with an electric mixer on medium speed until light and fluffy. Beat in eggs and vanilla until well blended.

Add flour mixed with oatmeal, baking powder, nutmeg, cinnamon, baking soda and salt to butter-sugar mixture and beat until well blended.

Stir in apples, raisins and walnuts. Drop by teaspoonfuls onto greased cookie sheets.

Bake 15-18 minutes (or depending on the oven way less than that), just until edges begin to brown. Let cookies cool 2 minutes on sheets, then remove to a rack and let cool completely.
