Crispy Parmesan Zucchini

Recipe Hall of Fame, Quick and Easy Cookbook

3 large zucchini (about 1 1/2 pounds)
1/3 cup melted butter
1/2 cup grated Parmesan cheese
Seasoned salt
Minced fresh herbs (like marjoram or basil, opt)

Preheat broiler. Cut zucchini into 1/2-inch thick diagonal slices. Dip one cut surface of each slice in melted butter, then cheese coating well.
Place zucchini slices cheese-side up, on greased pan (s) with shallow sides. Sprinkle with seasoned salt and herb, if desired.

Broil 6-4 inches from heat until crisp and golden, about 6-8 minutes. Serve immediately.

Makes 6-8 servings
